African and Caribbean cuisine on the menu

KC’s African & Caribbean Cuisine has grown from a popular stall at the weekly Farmers’ Market to becoming the latest restaurant to open in Edward Roberts Court.

Daily food options on campus now include authentic African and Caribbean cuisine, thanks to the launch of KC’s, which opened ahead of the new academic year.

Plantain, jollof rice, and traditional Nigerian meat and fish dishes are among the items on a diverse menu developed by owner Mercy Statter, who began selling food at Lancaster University’s Farmers’ Market in 2013.

She set up the stall to fund her charity, Martha’s Dream, which supports a school in Nigeria and is named in tribute to her late mother.

Now she is looking forward to sharing even more of her cuisine with students and staff who have encouraged her charitable enterprise.

Mercy said: “I don't know how much I can thank Lancaster University for the help they have given to our charity. That's the foundation of getting the money to fund Martha’s Dream school.”

At the same time as supporting the education of children at school in Nigeria, Mercy is also committed to using her food to create joy and community here on campus in Lancaster.

“Food, back home, brings families together,” she said. “When I was growing up, my mum would say, ‘Food is nothing; it doesn't matter how much food you have. When you see somebody who is hungry, divide that food into two and share.’ Because food brings happiness. It brings joy.”
